Tomato Garlic Shrimp Skewers
Ingredients
- 1 ½ pound jumbo Shrimp
- 15 cherry tomatoes
- 8 large cloves garlic
- ½ tsp dried oregano
- ½ tsp dried basil
- ½ tsp dried chili pepper flakes
- ¼ cup olive oil
- 1 ½ tbsp Worcestershire sauce
- ½ tsp lemon juice
- salt to taste
- pepper to taste
- 6-8 wooden skewers
Instructions
- Thaw & peel shrimp.
- Slice garlic cloves into thirds, using only the middle pieces.
- Combine all ingredients in a large bowl, minus the tomatoes. Marinate shrimp for 3-5 hours.
- Soak the skewers in water for 30 minutes to prevent burning.
- Thread shrimp, garlic, and tomato on skewer. Repeat until skewer is full, then repeat on all remaining skewers.
- Brush tomatoes with olive oil. Season skewers lightly with salt & pepper.
- Place skewers on a pre-heated grill and cook for 3 minutes. Flip and cook another 2-3 minutes or until shrimp are pink.
- Remove from grill and serve.
