Seared Cod with Chive Butter Sauce
Ingredients
- 1 ½ pounds Cod fillet
- panko breadcrumbs
- 2 eggs for egg wash
- kosher salt
- black pepper
- 4 tbsp grapeseed oil
- ½ lemon juiced
- 1 tbsp butter
- 1 sprig fresh thyme
Butter Sauce:
- 2 cups white wine (Chardonnay)
- 2 sprigs fresh thyme
- 1 shallot sliced
- 2 cloves garlic smashed
- 2 tbsp heavy cream
- ½ lemon juiced
- 2 tbsp butter cold
- 3 tbsp chives chopped
- fresh black pepper
Instructions
- Preheat oven to 400℉.
- Place breadcrumbs in a shallow dish. In another dish, add 2 beaten eggs.
- Season both sides of fish with salt and pepper. Once seasoned, brush belly side of cod with egg. Dip egg side into breadcrumbs.
- In a cast iron skillet, add oil. Heat until hot. Sear only the breaded side of the fish.
- Place skillet in oven for 3-4 minutes until cooked.
- Once cooked, flip fish over and add lemon juice, butter, and sprig of thyme. Let melt and baste fish with juice. Pour butter sauce over.
- SAUCE: in saucepan, add wine, thyme sprigs, shallot, and garlic. Reduce to a syrup. Strain and add heavy cream & lemon juice and bring to a slight simmer. Whisk in cold butter and once melted, add fresh chives and season with black pepper.
