Seared Ahi Tuna Salad with Fresh Snap Peas

Ingredients

  • 1 ½ pound Ahi Tuna Steaks
  • 3 tsp extra virgin olive oil divided
  • ½ plus ⅛ tsp salt divided
  • ½ tsp coarsely ground black pepper
  • 3 tbsp fresh lime juice
  • 4 tsp honey
  • 1 tsp dark sesame oil
  • ½ tsp fresh ginger peeled & minced
  • 6 cup mixed salad greens
  • 1 ½ cup sugar snap peas trimmed
  • ½ cup scallions thinly sliced
  • 1 tsp sesame seeds toasted

Instructions

  • Rub tuna steaks with 1 tsp olive oil; sprinkle with ½ tsp each salt and pepper. Set aside.
  • For the dressing, combine lime juice, honey, remaining 2 tsp olive oil, sesame oil, ginger, & remaining ⅛ tsp salt in a bowl; whisk to combine. Set aside.
  • Heat a large skillet over medium-high heat. Add tuna; cook 3 minutes without disturbing. Turn and cook 2 minutes more or to desired degree of doneness.
  • Transfer tuna to a cutting board; slice into ½ inch thick pieces.
  • Divide greens among plates. Top each salad with tuna. Add even amounts of snap peas, scallions, & sesame seeds. Drizzle evenly with dressing.
