Scallops Stir Fry
Ingredients
- 1 pound Scallops
- 1 pound fresh snow peas
- 1 pound fresh mushrooms sliced
- 1 small red bell pepper
- 1 small yellow bell pepper
- 1 small onion
- 1-2 tbsp vegetable oil
Marinade:
- 2 tbsp soy sauce
- 2 tbsp lemon juice
- 4 tbsp rice vinegar
- 2 tbsp brown sugar
- 2 tsp dry sherry
- 1 small clove garlic crushed
- ⅛ tsp ground pepper
- 1 ½ tbsp cornstarch
Instructions
- Rinse scallops well, pat dry.
- Prepare vegetables: wash and remove ends from snow peas, slice mushrooms ¼ inch thick, and cut peppers into ½ inch pieces.
- Mix marinade, divide in half.
- Toss scallops with half of marinade.
- Stir fry scallops in hot oil in wok until cooked (4-5 minutes). Remove scallops and set aside.
- Stir fry vegetables until tender and crisp.
- Place all ingredients back into wok and add remaining marinade. Stir until heated through.
