Ingredients

  • 1 pound Scallops
  • 1 pound fresh snow peas
  • 1 pound fresh mushrooms sliced
  • 1 small red bell pepper
  • 1 small yellow bell pepper
  • 1 small onion
  • 1-2 tbsp vegetable oil

Marinade:

Instructions

  • Rinse scallops well, pat dry.
  • Prepare vegetables: wash and remove ends from snow peas, slice mushrooms ¼ inch thick, and cut peppers into ½ inch pieces.
  • Mix marinade, divide in half.
  • Toss scallops with half of marinade.
  • Stir fry scallops in hot oil in wok until cooked (4-5 minutes). Remove scallops and set aside.
  • Stir fry vegetables until tender and crisp.
  • Place all ingredients back into wok and add remaining marinade. Stir until heated through.
