Salmon with Black Bean & Corn Salsa

Ingredients

For Salsa:

  • ¾ cup black beaks drained
  • ¾ cup canned corn drained
  • ¼ cup red onion chopped
  • cup fresh cilantro chopped
  • 1 tbsp olive oil
  • 1 ½ tbsp lime juice
  • 1 ½ tbsp lemon juice
  • salt to taste
  • pepper to taste

Instructions

  • For Salsa: combine all ingredients, set aside.
  • Rub olive oil over salmon and sprinkle with salt and pepper. Salmon can be grilled or baked.
  • To grill: place on a greased, preheated grill for 8-10 minutes, or until fish is opaque and flakes easily with a fork.
  • To bake: place in a greased cooking dish in a preheated 350℉ oven for 10 minutes, or until fish is opaque and flakes easily with a fork.
  • Spoon salsa over salmon just before serving.
