Instructions

  • Drain oysters and reserve 2 tbsp of juice.
  • Combine oysters, pancake mix, onion, baking powder, egg, salt, pepper, and reserved oyster juice.
  • Heat cooking oil in a heavy frying pan.
  • Drop mixture by the tablespoon into hot oil. Brown on both sides. Drain on paper towels.
