
Oyster Fritters
Ingredients
- 1 pint shucked Oysters and juice
- 1 cup pancake mix
- 2 tbsp onion finely chopped
- 1 tsp baking powder
- 1 medium egg
- salt
- black pepper
- ¼ cup cooking oil
Instructions
- Drain oysters and reserve 2 tbsp of juice.
- Combine oysters, pancake mix, onion, baking powder, egg, salt, pepper, and reserved oyster juice.
- Heat cooking oil in a heavy frying pan.
- Drop mixture by the tablespoon into hot oil. Brown on both sides. Drain on paper towels.
