Ingredients

  • ½ cup dry white wine
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • ¼ cup Worcestershire sauce
  • 2 cloves garlic minced
  • ¼ tsp black pepper
  • 1 pound Blue Marlin cut into 1 inch cubes

  • 3 medium Vidalia or red onions peeled
  • 1 green bell pepper cut into 1 inch pieces
  • 1 red bell pepper cut into 1 inch pieces
  • 12 small button mushrooms

Instructions

  • Whisk white wine, olive oil, lemon juice, Worcestershire sauce, and garlic in a medium bowl to blend. Reserve some of marinade for basting during grilling.
  • Add fish to rest of marinade; refrigerate for 1-4 hours.
  • Soak wooden skewers in water for 20-30 minutes.
  • Preheat grill to medium heat.
  • Thread fish onto skewers alternatively with onions, peppers, and mushrooms.
  • Grill until just cooked, turning frequently and brushing frequently with reserved marinade. Cook time should be approximately 5-7 minutes.
