Mahi with Lemon & Capers
Ingredients
- 2 portions Mahi Mahi
- oil for grilling
- 1 tsp lemon zest
- 3 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- ¼ cup extra virgin olive oil
- 1 tbsp capers chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- ½ tsp black pepper
Instructions
- Zest the lemon and chop the capers.
- Whisk together zest, capers, lemon juice, Dijon mustard, extra virgin olive oil, garlic powder, onion powder, parsley, and black pepper.
- Combine mahi and mixture in a ziploc bag, let marinate for 2-3 hours only.
- Preheat grill with nonstick spray or brush with oil. Preheat to medium high heat.
- Place fish on grill and cook for 8-10 minutes, or until fish is cooked through.
