
Lump Crab Salad
Ingredients
Dressing:
- ½ tsp lime zest grated
- 3 tbsp fresh lime juice
- 1 ½ tbsp extra virgin olive oil
- 1 tsp sugar
- 1 tsp Thai fish sauce
- ¼ tsp salt
- ⅛ tsp ground red pepper
Salad:
- ¾ cup celery finely chopped
- ⅔ cup red pepper finely chopped
- ⅓ cup green onions thinly sliced
- 3 tbsp fresh mint chopped
- 1 pound Crabmeat
- 4 medium Boston lettuce leaves
Instructions
- To prepare dressing, combine all dressing ingredients and stir with a whisk.
- To prepare salad, place celery, red pepper, green onions, mint, and crabmeat in a medium bowl. Toss gently to combine.
- Drizzle dressing over salad and toss gently to coat.
- Place 1 lettuce leaf on each plate and spoon salad into each leaf.
