Lump Crab Salad

Ingredients

Dressing:

  • ½ tsp lime zest grated
  • 3 tbsp fresh lime juice
  • 1 ½ tbsp extra virgin olive oil
  • 1 tsp sugar
  • 1 tsp Thai fish sauce
  • ¼ tsp salt
  • tsp ground red pepper

Salad:

  • ¾ cup celery finely chopped
  • cup red pepper finely chopped
  • cup green onions thinly sliced
  • 3 tbsp fresh mint chopped
  • 1 pound Crabmeat
  • 4 medium Boston lettuce leaves

Instructions

  • To prepare dressing, combine all dressing ingredients and stir with a whisk.
  • To prepare salad, place celery, red pepper, green onions, mint, and crabmeat in a medium bowl. Toss gently to combine.
  • Drizzle dressing over salad and toss gently to coat.
  • Place 1 lettuce leaf on each plate and spoon salad into each leaf.
