Halibut with Mango Salsa

Ingredients

  • 2 cups plum tomatoes seeded & diced
  • 1 ½ cups ripe mango peeled & diced
  • ½ cup onion diced
  • ½ cup fresh cilantro chopped
  • 2 tbsp fresh lime juice
  • 1 tbsp cider vinegar
  • 1 tsp sugar
  • 1 tsp salt divided
  • 1 tsp black pepper divided
  • 2 cloves garlic minced
  • 1 ½ pounds Halibut fillet
  • 1 tbsp olive oil

Instructions

  • Preheat grill.
  • Combine tomatoes, mango, onion, cilantro, lime juice, cider vinegar, and sugar. Stir in ½ tsp salt, ½ tsp pepper, and garlic.
  • Rub halibut with oil. Season with remaining ½ tsp salt and ½ tsp pepper.
  • Place fish on grill rack or greased foil tray.
  • Grill 3 minutes per side, or until fish flakes easily with a fork.
  • Serve with mango salsa.
