Halibut with Mango Salsa
Ingredients
- 2 cups plum tomatoes seeded & diced
- 1 ½ cups ripe mango peeled & diced
- ½ cup onion diced
- ½ cup fresh cilantro chopped
- 2 tbsp fresh lime juice
- 1 tbsp cider vinegar
- 1 tsp sugar
- 1 tsp salt divided
- 1 tsp black pepper divided
- 2 cloves garlic minced
- 1 ½ pounds Halibut fillet
- 1 tbsp olive oil
Instructions
- Preheat grill.
- Combine tomatoes, mango, onion, cilantro, lime juice, cider vinegar, and sugar. Stir in ½ tsp salt, ½ tsp pepper, and garlic.
- Rub halibut with oil. Season with remaining ½ tsp salt and ½ tsp pepper.
- Place fish on grill rack or greased foil tray.
- Grill 3 minutes per side, or until fish flakes easily with a fork.
- Serve with mango salsa.
