Instructions

  • Combine mayo, parsley, & lemon zest in a small bowl. Add anchovy paste, if desired. Chill until ready to serve.
  • Brush zucchini and trout with olive oil, and sprinkle with sea salt and pepper. Grill zucchini 3-4 minutes per side.
  • Grill fillets over high heat for 2 minutes. Turn and grill 3-4 more minutes.
  • Serve with herb aioli.
