Grilled Trout with Zucchini & Herb Aioli
Ingredients
- 6 Trout fillets
- ¾ cup mayonnaise
- ¼ cup fresh flat leaf parsley chopped
- 1 tsp lemon zest
- ¼ tsp anchovy paste (optional)
- 3 zucchini halved & cut into ½ inch slices
- 2 tbsp olive oil
- coarse sea salt or kosher salt
- fresh ground black pepper
Instructions
- Combine mayo, parsley, & lemon zest in a small bowl. Add anchovy paste, if desired. Chill until ready to serve.
- Brush zucchini and trout with olive oil, and sprinkle with sea salt and pepper. Grill zucchini 3-4 minutes per side.
- Grill fillets over high heat for 2 minutes. Turn and grill 3-4 more minutes.
- Serve with herb aioli.
