Ingredients

Lemon Salsa Verde Ingredients:

  • zest of ¼ lemon
  • juice and segments of ¼ lemon
  • 1 scallion finely chopped
  • 1 clove garlic finely chopped
  • salt
  • pepper
  • 1 cup olive oil
  • ¼ cup white wine vinegar
  • ¾ cup fresh parsley chopped
  • ½ cup cilantro finely chopped
  • ¼ cup chives chopped

Instructions

  • Prepare grill for medium-high heat. Oil grates.
  • Toss scallops with 2 tbsp olive oil on a baking sheet and season with salt & pepper.
  • Place direct on grill or use skewers. Grill, turning occasionally, until lightly charred and just cooked through. Cook approximately 3 minutes per side.

Lemon Salsa Verde Instructions:

  • Combine lemon zest with seeded and chopped lemon segments, shallot, and garlic; season with salt and pepper. Let sit 5 minutes.
  • Stir in olive oil, vinegar, parsley, cilantro, and chives. Season with salt, pepper, and lemon juice, if desired.
  • Serve with scallops.
