Grilled Grouper with Creole Salsa
Ingredients
- 1 ½ pounds Grouper fillet
- olive oil
- salt
- pepper
- 1 ear corn roasted
- 1 cup tomato finely diced
- ½ cup red onion finely diced
- ¼ cup pickled okra thinly sliced
- 1 tsp minced garlic
- ¼ tsp red pepper flakes
- ¼ cup olive oil
Instructions
- Slice roasted corn off cob into a pan over heat.
- Add tomato, red onion, pickled okra, garlic, red pepper, and olive oil. Stir occasionally until okra and onions are slightly soft, about 3 minutes.
- Preheat grill.
- Brush grouper with olive oil and season with salt & pepper.
- Grill fish until cooked through.
- Place fish on serving plates and spoon salsa mixture on top of grouper.
