
Crisp Shrimp Salad
Ingredients
- 2 cup medium Shrimp cooked & cut in half
- 1 cup celery thinly sliced
- 1 tbsp onion minced
- 1 tbsp fresh lemon juice
- 1 tsp rosemary (if desired)
- ½ cup mayonnaise
- salt to taste
- pepper to taste
- romaine lettuce (or other desired greens)
- tomatoes thinly sliced
- avocado thinly sliced
- cherry tomato sliced (optional)
Instructions
- In a medium bowl, mix cooked shrimp, celery, onion, lemon juice, mayo, salt, and pepper.
- Serve on a bed of lettuce with sliced tomatoes and avocado.
