Crisp Shrimp Salad

Ingredients

  • 2 cup medium Shrimp cooked & cut in half
  • 1 cup celery thinly sliced
  • 1 tbsp onion minced
  • 1 tbsp fresh lemon juice
  • 1 tsp rosemary (if desired)
  • ½ cup mayonnaise
  • salt to taste
  • pepper to taste
  • romaine lettuce (or other desired greens)
  • tomatoes thinly sliced
  • avocado thinly sliced
  • cherry tomato sliced (optional)

Instructions

  • In a medium bowl, mix cooked shrimp, celery, onion, lemon juice, mayo, salt, and pepper.
  • Serve on a bed of lettuce with sliced tomatoes and avocado.
