Corvina Ceviche
Ingredients
- 1 pound Corvina
- 1 ½ cup onion minced
- 1 ⅓ cup fresh lemon juice
- ½ cup celery diced
- ¼ cup cilantro shredded
- salt
- ½ minced hot pepper (optional)
Instructions
- Cut fish into bite size pieces and place in a glass bowl.
- Add onion, lemon juice, celery, cilantro, salt, and hot pepper (optional) to bowl and mix well. (The lemon juice should cover the fish).
- Cover bowl with plastic wrap and place in the refrigerator.
- Allow one day for the fish to "cook" in the lemon juice and onions.
- Serve with crackers or bread.
