Ingredients

  • 1 pound Corvina
  • 1 ½ cup onion minced
  • 1 ⅓ cup fresh lemon juice
  • ½ cup celery diced
  • ¼ cup cilantro shredded
  • salt
  • ½ minced hot pepper (optional)

Instructions

  • Cut fish into bite size pieces and place in a glass bowl.
  • Add onion, lemon juice, celery, cilantro, salt, and hot pepper (optional) to bowl and mix well. (The lemon juice should cover the fish).
  • Cover bowl with plastic wrap and place in the refrigerator.
  • Allow one day for the fish to "cook" in the lemon juice and onions.
  • Serve with crackers or bread.
