- Mix onion, garlic, lemon juice, olive oil, oregano, salt, and pepper. Beat with a whisk.
- Preheat grill to very high heat.
- Lather fish all over with mixture. Add some mixture to the cavity of the fish. Keep some extra for basting.
- Grill for 7-10 minutes per side, basting occasionally.
- Serve fish with extra mixture if there is any remaining. Garnish with parsley and lemon.
