Peanut Coated Orange Roughy
Substitutes: Catfish, Haddock, Flounder

1 lb. orange roughy fillets
1/2 cup milk
1/4 lb. salted peanuts, finely chopped
1/4 cup flour
1 oz. butter

Cut fillets into serving size pieces.  Combine finely chopped peanuts and
flour.  Dip fish pieces into milk, then into peanut & flour mixture, coating well.

Heat butter in pan and cook fish 6-8 minutes (if using frozen fillets, allow
an extra 3 minutes), turning once.  Drain.  Serve immediately with salad
or vegetables.  Serves 3-4.
