Herbed Mahi Mahi with Mushrooms
Substitutes: Haddock or Halibut

2 lbs. mahi mahi fillets
Pepper
½ cup butter
1 cup thinly sliced green onions
1 lb. mushrooms, sliced
¼ cup fresh dill, minced (2 Tbsp. dried)

Preheat oven to 400ºF. Cut fillets into serving sized pieces. Sprinkle with pepper. Dot fish with 2 Tbsp. butter. Place fish in buttered or oiled baking pan.

Melt 3 Tbsp. butter in a skillet, add onions, cook for 1 minute, add remaining butter, add mushrooms, continue cooking over moderate heat until butter had been absorbed by the mushrooms. Add dill, stir and pour mixture over fish and bake for 15-20 minutes, basting occasionally. Serves 4-6.
