Grilled Catfish
Substitutes: Orange Roughy, Tilapia

4 catfish fillets
½ tsp. garlic salt
Black pepper to taste

Rinse fish with cold water, pat dry. Sprinkle with garlic salt and pepper. Place catfish in a well-oiled grill basket or on a well-oiled grill rack. Grill on an uncovered grill directly over medium-hot coals 4-5 minutes per side or until fish flakes easily. Top each fillet with 2-3 Tbsp. salsa & serve immediately.

Fresh Salsa
3 medium tomatoes, chopped
¼ cup chopped onion
4-6 tsp. finely chopped jalapeno pepper
2 Tbsp. white wine vinegar
1 tsp. salt

In bowl, combine tomatoes, onion, jalapeno pepper, vinegar and salt. Stir well. Let stand at room temperature for about 30 minutes before serving. Chill to store. Makes 3 cups.

* For a mild salsa, remove seeds. For a hotter sauce, add 1-2 whole chopped peppers.
