Breakfast Trout
Substitute: Any small whole fish

6-8 oz. pan-dressed trout
˝ lb. bacon
Flour or cornmeal
Salt & pepper to taste

Cook bacon in large skillet. Remove bacon from pan, reserve bacon fat in pan. Dredge fish in flour or cornmeal and sauté in bacon fat a few minutes on each side. Season to taste. Garnish with lemon. Serve with bacon, fried potatoes and warm rolls. Serves 6.
